Why is crop rationing so important?
Winemaking of the highest quality begins in the vineyard. Crop normalization is the process of reducing the number of bunches on the vine, which allows the plant to focus its resources on growing a smaller but higher quality crop. This promotes the development of berries with a high concentration of sugars, acids and polyphenols, which forms the intense flavor, complex texture and expressive aroma of the future wine.
The even ripening of the berries, achieved through rationing, allows the creation of a balanced wine where every note – from fresh acidity to deep fruitiness – is fully revealed. Moreover, this approach enhances the wine’s ability to convey the unique characteristics of the terroir: subtle minerals, soil nuances and the influence of climate.
